One With Land – Pine Bush, NY

The menu changes frequently and the dishes are so thoughtful and flavorful, they stay with you long after the meal ends. Vegetarian standout: Celery salad—so deceptively simple you’ll wonder how they made celery taste this good. Every bite is crisp, clean, and quietly magical.

Luckily for vegetarians, the menu is not an afterthought—it’s a highlight.

Harana Market – Accord, NY

The market is inclusive, generous, and full of community spirit—where you can even gift a meal to someone in need via a community board. Vibe: Filipino comfort food with a mission and a creatively charged, joyful heart
Vegetarian standouts:
Ensaladang Talong—a roasted eggplant salad with mango, tomato, onion, sweet-tangy dressing, black sesame seeds, and cilantro. One bite, and you might literally squeal.

Run by three childhood friends, Threshold is serving what I can confidently say is the best Korean food I’ve had anywhere. This modern, intimate space delivers vibrant, layered dishes built on hyper-local ingredients and deep culinary technique. Each plate is thoughtful and bursting with flavor—bright, bold, and utterly unique. Whether it’s a reimagined classic or a seasonal creation, the food speaks for itself in ways that are hard to put into words. Of course, the menu has something for your meat-eating friends, but vegetarians will find a full-flavored, deeply satisfying experience.
Vibe: Sleek and soulful, with next-level Korean flavors
Vegetarian standouts:
Jook (risotto)—a dreamy, creamy rice porridge with English peas, doenjang (Korean fermented soybean paste), butter, and pea tendrils. It’s comforting, elegant, and borderline transcendent.
Bibimbap with tofu—a colorful bowl of daikon, bean sprouts, kale stems, mushrooms, spinach, cucumber kimchi, chojang, and sesame oil. It’s a fresh, fiery mix that will make your mouth water even before it hits the table.
