Curator’s statement
Many travelers arrive in Burgos with one destination in mind: its magnificent Gothic Cathedral. While it certainly deserves its reputation as one of Spain’s greatest architectural masterpieces, I believe Burgos reveals its true character between the landmarks, not just inside them. Every time I return, I naturally follow almost the same route—not because I have planned it that way, but because it simply feels right. I begin walking along the Paseo del Espolón, cross through the Puerta de Santa María into the historic center, spend time around the Cathedral, wander through the surrounding streets, and finish the day at the Castle Viewpoint overlooking the city. One of the things I enjoy most about Burgos is its authenticity. Pilgrims walking the Camino de Santiago blend naturally with local residents, cafés fill with everyday life, and the city never feels like it exists only for visitors. For me, Burgos is a city that rewards those who choose to slow down and discover it one step at a time.

Things to do in Burgos, Spain

Paseo del Espolón is where I always begin discovering Burgos—an elegant promenade that perfectly captures the city's relaxed rhythm
Walk along Paseo del Espolón
One of Burgos’ most elegant promenades and my favorite place to begin exploring the city. During spring and summer, the mature trees create a beautiful natural canopy that transforms a simple walk into one of Burgos’ most memorable experiences.
Cross through Puerta de Santa María
Enter the historic center through one of Burgos’ most iconic landmarks. This impressive medieval gateway provides the perfect introduction to the city’s rich architectural heritage.
Explore Burgos Cathedral
Take your time discovering one of Europe’s finest Gothic cathedrals, both inside and out. While it is Burgos’ best-known attraction, I recommend slowing down to appreciate the surrounding streets and atmosphere as well.
Wander through the Historic Center
Some of Burgos’ greatest pleasures are found away from the main landmarks. Wander through its charming streets, traditional shops, cafés, and plazas where pilgrims walking the Camino de Santiago naturally blend with local residents.
Visit the Castle viewpoint
End your day at the Mirador del Castillo, where panoramic views over Burgos are especially rewarding as the afternoon light begins to soften. It is my favorite place to appreciate the city’s skyline and reflect on the day’s discoveries.
Experience the Camino de Santiago
Even if you’re not walking the Camino yourself, you’ll immediately notice its presence throughout the city. Watching pilgrims and local residents naturally share cafés, restaurants, and public spaces is one of the most authentic experiences Burgos has to offer.

La Fábrica
My favorite restaurant in Burgos. Modern Castilian cuisine served in a contemporary space with an open kitchen that immediately creates confidence and excitement. The tasting menus are exceptional without feeling overly formal.
Cobo Tradición & Cobo Evolución
One of Burgos' finest dining experiences. Chef Miguel Cobo reinterprets regional cuisine with remarkable precision while maintaining the essence of local ingredients.
Casa Ojeda
A Burgos institution. Traditional Castilian recipes served in a historic setting that has welcomed generations of locals and visitors alike.
Boccaccio 70
An excellent Italian alternative.
Perfect after several days of Spanish cuisine while maintaining excellent quality and service.
Hotel Landa Restaurant
Located just outside the city, Hotel Landa has become a destination in itself. Beyond its historic building and elegant atmosphere, it is the perfect place to experience one of Burgos’ most iconic local specialties: black pudding (“morcilla de Burgos")
Need to know
Stay at least two nights. Burgos deserves more than a quick stop to visit the Cathedral. Give yourself time to enjoy its relaxed pace, outstanding restaurants, and elegant public spaces.
Explore the city on foot. Most of Burgos’ highlights are within easy walking distance if you stay near the historic center.
Reserve restaurants in advance. Burgos has an exceptional culinary scene, and many of its most popular restaurants fill up quickly, especially on weekends.
Walk Paseo del Espolón more than once. Morning, afternoon, and evening each offer a different atmosphere. It’s one of the city’s defining experiences.
Visit the Castle Viewpoint before sunset. The panoramic views over Burgos are well worth the short climb.
If you’re driving through northern Spain, stop at Hotel Landa. Even if you’re not staying there, it’s one of the region’s most iconic places to enjoy traditional Morcilla de Burgos (black pudding).
Don’t try to see everything. Some of my favorite memories of Burgos come from simply wandering through the historic streets, discovering cafés, and enjoying the city’s relaxed rhythm.
Take time to observe the Camino de Santiago. Watching pilgrims and local residents naturally share the city is one of Burgos’ most authentic experiences.
Choose your hotel based on the experience you want. Stay in the historic center if you plan to explore the city on foot, or choose Hotel Landa if you’re looking for a peaceful luxury retreat where the hotel itself becomes part of the destination.
