The hotels on the caldera side are called cave hotels because they were once fishermen's homes, built into the steep mountainside to keep cool in the summer and stave off pesky pirates. These accommodations, once simple, are now luxurious, featuring whitewashed walls, arched doorways and vaulted ceilings. The interiors, while sparse, are beautifully decorated, but most importantly, they offer stunning panoramic views of the Aegean Sea (like all the best places to stay in Santorini). Located in prime positions within the caldera, these cave hotels provide easy access to Santorini's vibrant villages, stores, restaurants, and bars. 

Santorini's geography encompasses Fira, the island's capital; Oia, renowned for its iconic blue-domed churches and stunning sunsets; further south, the beautiful village of Pyrgos; and lastly, Akrotiri, which showcases Santorini's archaeological treasures. 

The following gems are my favorite places to stay in Fira and Oia. 

1. Noūs Santorini: Perched atop the cliffs of Fira, Nous is minimalist and elegant, and several rooms have private terraces and pools. This hotel has a great spa and pool. The service is warm and personalized.

2. Adronis Hotels: This group has three gorgeous hotels in the enchanting village of Oia: Adronis Luxury Suites, Adronis Boutique Hotel and Adronis Arcadia. All three hotels are beautiful, with many room types that offer private plunge pools and epic views. Adronis Hotels are known for their impeccable service and exquisite dining options.
