There’s something about St. Lucia that just stirs the soul. I spent my 40th birthday at the stunning Rabot Estate near Soufriere, marveling at the Pitons from the infinity pool, feasting on chocolate cuisine and exploring all the island has to offer. If you’re like me and get a little restless laying on the beach for too long, St. Lucia is a perfect mix of beachy relaxation and adventure!

Day 1: Head to the beach
My favorite way to start any Caribbean vacation is at the beach! St. Lucia has some of the most unique beaches with some of the most breathtaking views. Sugar Beach is a slice of paradise right between the Pitons, with its white sands and views from the base of the mountains.
Malgretoute Beach is another great option. It tends to be a little less crowded and offers the same amazing views! Both spots have food and drink options for lunch. Be sure not to miss out on the Banana Daiquiris!
Day 2: Self-care day
It’s time for some self-care today! After breakfast at your hotel, head to the Soufriere Volcano for a unique spa experience. The Sulphur Hot Springs are a great way to unwind and relax. Coat yourself in mud and hop in the mineral water! There are a series of pools, ranging from 101 to the relatively cool 88 degrees. Definitely wear a dark-colored bathing suit so the mud doesn’t stain!
When you’re finished there, make your way to Piton Falls. You’ll follow a beautiful, short trail through the rainforest to a pool at the base of the falls. You can get right under the waterfall and wash away whatever mud might still be left. Bonus: it’s a free massage for your shoulders! It’s less crowded earlier in the day and we had the luxury of having the whole place to ourselves!
Later, head into town and explore the town of Soufriere. The brightly colored buildings are the definition of Caribbean vibes! This is also a great time to pick up some souvenirs.
Orlando’s is a can’t miss spot for dinner. The restaurant is in the owner’s home and the ambiance is so unique. The tasting menu is delicious and gives you a chance to sample so many amazing Creole dishes!
Day 3: Get out on the water
What Caribbean vacation is complete without a boat ride! Most hotels offer boat tours that will take you to other parts of the island. My trip took me past the quaint fishing villages that dot the coast and included a leisurely stop in Marigot Bay for lunch, a quick swim and of course, another Banana Daiquiri! You can buy them right off the thatched boats docked in the bay.
Next, we headed to the North end of St. Lucia to visit Pigeon Island to get a real sense of the Island’s history. You can take a hike around the island and tour Fort Rodney. (Quick tip here: bring some sneakers on the boat if you plan to do this part. Flip-flops aren’t a great idea!) Pop into The Thirsty Parrot before you hop back on the boat for the trip back to Soufriere, where you’ll have an amazing view of the Pitons for the rest of your journey!
Day 4: Indulge
Start your day with breakfast at the fabulous Rabot Estate. The outdoor patio has some of the most incredible views of the Pitons and the food is delicious. The estate is a working cocoa farm, and they find unique (and tasty) ways to incorporate chocolate into any dish you can think of!
If you haven’t had your fill of chocolate yet, there’s also an entire chocolate experience on site at Project Chocolate. You can take a guided tour of the cacao farm and learn everything there is to know about how cocoa becomes chocolate! And of course, there are more cocoa snacks and cocktails to enjoy.
If you’re staying at the Rabot Estate, you can also take advantage of the beautiful property and wander through the rainforest trails through the cocoa grove and take a short (but steep) hike up the Big View Nature Trail for another great vantage point of the Pitons.
Day 5: Time to say goodbye
Soak up your final hours in paradise taking advantage of everything your hotel has to offer and take a minute to soak up your last glimpses of the magnificent Pitons before you head to the airport.
