Things to do in Florida

Magic Kingdom: Everything about Magic Kingdom makes me happy. This is the park that we spend the most time in and often will "rope-drop" (meaning to be in the park before it officially opens waiting for them to open the land) until the park closes.
Happily Ever After Fireworks: Fireworks and projections at Cinderella's Castle. This has brought tears to my eyes. It's amazing. I love these fireworks show the best of all of them that I've seen throughout the years.
Park Hopper: This is a must for us! This will also help you maximize your time in the parks. For us, Animal Kingdom and Hollywood Studios are not full-day parks, so it's great to be able to Hop to another after doing what we want at these...or to get some more wonderful food from Epcot!
Epcot: We love exploring the World Showcase, but after several trips we have found that we are always going to the Festival booths to eat and drink around the world. There are so many great options, we utilize the park hopper to spend an hour getting some food either mid-day, or at the end of the day. Plus, the food portions are sized so you can try several items and are usually easy to share. Beware, though that you might have to use the trash can as your table...don't worry, all the cool kids do it. Spaceship Earth is lit up at night. Make sure to set some time to watch the color show...it makes for some really neat pictures.
Monorail: Take some time out and explore the various resorts on the Monorail. The Contemporary, Polynesian, Grand Floridian...and if you are so inclined, have a Monorail Bar Crawl.
Disney Springs: This is great to do on arrival day. Lots of stores and dining options. The big World of Disney store is located here. They also have a cool Orange Bird mural. All the Disney Resorts have transportation to Disney Springs, and if you are driving, parking is free.
Pre-planning: This is a must! You need to understand what your must-dos are before you go. If you are on a tight schedule, purchasing Lighting Lane might be the best thing to do:

Note: Guests with a Valid Disney Resort Hotel Reservation: Make reservations for your entire length of stay (up to a 10-night stay) up to 60 days in advance of your arrival! This can help you enjoy streamlined vacation planning. This means you can make all your reservations on the same day — so you don’t have to check availability day after day. All Other Guests: Make reservations up to 60 days in advance. At approximately 6 am daily, new reservation booking windows become available for select Walt Disney World restaurants.
Disney Springs:
Jock Lindsey's Hangar Bar — This is a must if you are a fan of Indiana Jones! So many Easter Eggs. Family-friendly but with a bar vibe.
Morimoto Asia — We loved our experience here. The food was fantastic, and as a fan of Iron Chef, I got to check another one off my list! Do Make a Reservation!
Gideon's Bakehouse — This place almost always has a line. Half-pound cookies that are so good!
Animal Kingdom:
Flame Tree Barbecue (Mobile Order Available) - French Fries with Pulled Pork and Cheese
This is a side, but large enough for a meal...and if you are on a dining plan, can be used as a "snack".
Hollywood Studios:
The Hollywood Brown Derby Lounge — you do not need a reservation for the lounge. You can walk up and put your name on the list at 11 am when they open. First-come, first serve.
Polynesian Resort:
Ohana - Requires reservations. Served family style. Breakfast is a character meal featuring Lilo & Stitch. Dinner is all you can eat and features the famous Ohana Noodles. Everything was so good I needed a 2nd stomach to eat everything!
Pineapple Lanai - Dole Whip!!!! The amazingly refreshing soft-serve pineapple treat.
All over: Various Mickey-Shaped Treats — because food tastes better when it's Mickey-shaped! Favorites to try would be Mickey waffles for breakfast, or Mickey pretzels for an afternoon snack!
The Grand Floridian:
Enchanted Rose - Cocktail lounge inspired by Beauty and the Beast. The Truffle Fries are always a go-to for us while we sip on a couple of their cocktails. I generally alternate between the seasonal old fashioned or their margarita!
Narcoossee's - located on the lagoon, if you time your meal right, you can catch the Magic Kingdom fireworks. If you are on the dining plan, I highly recommend the Surf & Turf!
