I love a mix of activities and free-time exploration, and I'm always going to include at least one food tour on a trip. I like the pace of planning one main activity per day (two if there's a morning one and an evening one) so you don't spend the time feeling like you're always rushing from one thing to the next without really enjoying and absorbing an experience. I've learned the importance of staying in great walkable locations as well, and have come to love a really wonderful hotel. When I'm going to a city, I like to check out what concerts and events will be happening there during my dates and if there are any top restaurants I want to make sure I snag a reservation for while in town. Expert planning in advance means you get to experience all the things you don't want to miss while also enjoying downtime instead of using it for last-minute planning.
