Pietro represents a new generation of Sardinian shepherds who are reclaiming the value of their craft. His philosophy is simple but powerful: quality over quantity, identity over standardization. Every cheese is made from raw sheep milk, transformed daily using self-selected natural cultures, meaning no two batches are ever exactly the same.

The experience begins with a walk through the farm and a glimpse into the daily life of the flock. Depending on the time of day, you may witness milking or simply observe how deeply connected the work is to nature’s timing. From there, everything moves into the dairy space, where milk collected just hours before becomes Pecorino, ricotta, caciotta, or fresh stracchino.

What makes this truly special is the way Pietro works: there is no rigid formula. As he explains, “your hands and your mind must be inside the milk.” It’s a process guided by experience, intuition, and respect for raw ingredients.

The tasting itself is intimate and beautifully curated. Everything is paired simply and honestly: local bread, seasonal produce, house wine, honey, and preserves.
