The Fairmont Pacific Rim is the kind of property that makes you feel like you’ve stepped into a different version of yourself—the one who takes their time, savors every detail, and lets the city come to them. My wife, Diana and I spent Valentine’s Day weekend here with our dog, and the combination of world-class dining, thoughtful luxury, and genuinely pet-friendly hospitality made it one of the most memorable stays we’ve had. Vancouver already has a way of pulling you in with its mountains, harbour views, and West Coast energy, and the Fairmont Pacific Rim sits right at the center of it all.

The Fairmont Pacific Rim is a Forbes Five-Star property located on Vancouver’s waterfront, steps from Stanley Park, the Canada Place promenade, and the historic Gastown neighborhood. The hotel blends contemporary architecture with rotating art exhibitions, a TASCHEN library on the second floor, and an overall atmosphere that feels more like a curated cultural experience than a typical luxury hotel. Whether you’re walking through the lobby past a new installation or settling into your room with harbour and mountain views, there’s a sense that every detail here has been intentional.

We stayed in a Fairmont Gold Suite, which is part of the hotel’s elevated “hotel-within-a-hotel” experience on the upper floors. The Fairmont Gold level comes with its own dedicated 24/7 concierge team, private check-in, and access to the exclusive Gold Lounge on the 20th floor. The lounge overlooks Stanley Park and the North Shore Mountains and is where you’ll enjoy a complimentary made-to-order breakfast each morning, afternoon snacks, evening canapés prepared by the hotel’s chefs, and an honour bar. The suite itself featured two marble spa bathrooms, a separate living and dining area, and the kind of residential design touches—like Bocci pendant lighting, a B&B Italia sofa, and a soaker tub—that made it feel more like a high-end apartment than a hotel room. If you’re the type of traveler who values a quieter, more personalized experience away from the main lobby traffic, the Fairmont Gold floor is absolutely worth the upgrade.

One of the highlights of our stay was dinner at Botanist, the hotel’s award-winning restaurant located on the second floor. Botanist is Michelin-recommended and led by Executive Chef Hector Laguna, whose menus showcase sustainably sourced Pacific Northwest ingredients—think local seafood, organic produce from regional farms, and dishes that let the ingredients speak for themselves. For Valentine’s Day weekend, they offered a special six-course tasting menu with an optional wine pairing, and it was outstanding. Each course was thoughtfully composed, beautifully plated, and paired perfectly if you opted for the wines. It’s the kind of dining experience where you don’t need to leave the hotel to have one of the best meals of your trip. Botanist regularly offers seasonal tasting menus throughout the year, so depending on when you visit, there’s likely a curated multi-course option available. Beyond Botanist, the hotel also features The Lobby Lounge & RawBar for cocktails and lighter fare, Giovane Café for Italian-inspired coffee and pastries, and Giovane Bacaro, a Venetian-style wine bar.

What truly set this stay apart for us was the pet-friendly experience. The Fairmont Pacific Rim welcomes dogs and cats of any size at no additional charge. Upon arrival, our dog was greeted with a pet bed, food and water bowls, treats, and a walking map of the area. The staff genuinely treated our dog as part of the family, which made the whole trip feel more relaxed and complete. The one thing to keep in mind is the hotel’s downtown waterfront location means you’ll need to walk a bit to find a proper spot for your pet to do their business—there’s no immediate grassy area right outside the front door. That said, Stanley Park and the Vancouver Seawall are just a short walk away and offer some of the most scenic dog-walking paths you’ll find anywhere. This property is ideal for couples, honeymooners, and anyone celebrating a special occasion, but it’s equally great for solo travelers, pet owners, and anyone who appreciates art, food, and design woven into their hotel experience.

Book Botanist in advance. If a seasonal tasting menu is available during your visit, don’t hesitate—reserve it. Our Valentine’s Day six-course dinner was one of the best fine dining experiences we’ve had, and you won’t need to step outside the hotel for it.
Upgrade to Fairmont Gold if your budget allows. The private lounge access, complimentary breakfast, evening canapés, and dedicated concierge make a noticeable difference in the overall experience—especially for a special occasion trip.
Traveling with a pet? Plan your potty walks. The hotel is incredibly welcoming to pets, but the immediate surroundings are urban waterfront, so you’ll want to scope out the nearest green space when you arrive. Stanley Park and the Seawall trail start just a few minutes’ walk from the hotel and are well worth the stroll.
Don’t overlook the hotel’s art and culture. Between the rotating gallery exhibitions, the TASCHEN Library, and the overall design of the property, there’s a creative energy here that elevates it beyond a typical luxury stay. Take your time exploring the public spaces.
